Should I set everything up before or after arriving?

Before. Set up VPN/eSIM/payments before your flight. It is easier outside China, and you avoid the “no internet / no map / no payment” landing problem.

Do I need both Alipay and WeChat Pay?

Having both is best. If you only set up one, start with Alipay, then add WeChat Pay as a backup for merchants that prefer WeChat QR.

Can I rely only on cash or international cards?

In practice, mobile payment is the default. Large hotels/chains may accept cards, but street food, small shops, and many taxi scenarios are far smoother with Alipay/WeChat.
